Swiss Chard with Cheese

CSA member Sandy Stevens sent us this recipe. She reports that she submitted it for the Strolling of
the Heifers recipe contest. It won her first place and uses local ingredients.

2# Swiss Chard
2 tabl. butter
2 tabl. flour
1/2 cup milk
1/2 pound diced cheddar cheese

Steam washed chard. Set aside. Melt butter, stir in flour to make paste. Add milk and bring to boil. Add cheese, stirring until melted. Toss with steamed chard, place in greased, 2 quart casserole. Bake at 350 for 25 minutes.

Note: If you want, you can sprinkle cracker crumbs on top before baking.

You can also use other greens with good results.
