Winter Radish Recipes

Winter Radish Slaw
2-3 winter radishes, grated
3 cups shredded cabbage
1 cup carrots
1/2 cup onions (leeks would work)
lemon juice
2tbsp of olive oil
finely chop herbs of choice (mint, parsley, cilantro)

In a bowl toss together radishes, cabbage, carrots, onion, lemon juice, oil, herbs, salt and pepper to taste.

Radish Remoulade
2 winter radishes
3 tbsp mustard
4 tbsp of olive oil
1 tsp wine vinegar
parsley

Coarsely grate radishes. Whisk mustard with 3 tbsp hot water in a large bowl. Add oil in a slow stream, whisk until the dressing is emulsified and whisk in vinegar and salt and pepper to taste. Mix in radishes and parsley and toss.

Roasted

Winter radishes are also great roasted with other roots.
